Hill said the production facility on Dayton Street in Salinas has largely wound down, though the tasting room there remains open. The brewery identified the Castroville property last spring and closed on the purchase in August 2025, Hill said. "This is our new forever home where we will make the vast majority of our beer," Hill said. The facility is built around a 50-barrel BrauKon brewing system, a Bavarian-built system that patrons can view from the taproom. Hill said the equipment gives brewers more predictable control over production targets and specifications, and that the brewery has already produced beer on the system.
