Congregation Coffee will open a second location in Collierville's Water Tower District in December, owner Kenneth Schweighofer told The Commercial Appeal on October 30. The shop will occupy a 2,000-square-foot retail space at the Schilling Farms mixed-use development, according to [Yahoo](https://www.yahoo.com/news/articles/congregation-coffee-open-collierville-location-100606434.html). Schweighofer said the plan is to open before Christmas but did not give a firm date.

## Congregation Coffee's Collierville Space and Menu

Schweighofer opened Congregation Coffee in Germantown in late December 2023 and owns the Congregation retail center on Forest Hill Irene Road, which the coffee shop anchors. The Collierville cafe will sit in the building behind Playa Bowls and will offer specialty coffee drinks, teas, pastries and local bakery items.

"We're trying to create a space, and we're expanding to a second location to prove that the community really just wants a place to go and be a community," Schweighofer said. He said the space will resemble the Germantown shop with a couch area and cafe seating, and will be similar in size but with more back-of-house room and somewhat less seating.

Schweighofer said talks with commercial real estate firm Boyle Investment Co., developer of the Water Tower District, began about two years ago. The 50-acre development also houses Rotolo's Craft & Crust, Nothing Bundt Cakes, Crumbl Cookies, SOB Collierville and IMC Companies' corporate headquarters, and sits near national headquarters including Helena Agri Enterprises, MCR Safety, Juice Plus+, Mueller and Orgill, as well as the FedEx World Technology campus.

Schweighofer said the decision to expand followed a change in leadership at the coffee shop after high staff turnover. "I had to part ways and get new leadership here at the coffee shop before I felt comfortable enough that we actually had the ability to expand in a healthy and productive way," he said. Current staff will also work at the Collierville location.
